Ingredients
One pound steak (sirloin or ribeye), cut into piece sizes
Four medium potatoes, diced into cubes
Four tablespoons unsalted butter
Four cloves garlic, minced
One teaspoon salt adjust to the taste
Half teaspoon black pepper
One tablespoon fresh parsley, chopped for garnish
Two tablespoons olive oil
Instructions
Prepare the Potatoes: In a large pot, put salted water to boil. Add the diced potatoes, then cook for about ten minutes to become soft. Drain and set these aside.
Cook the Steak Bites: Heat two tablespoons of olive oil in cast iron at medium-high heat. Season the steak pieces using salt and pepper. When the oil warms, add the steak in one layer. Sear for about two or three minutes per side to brown to how you prefer. Take this off the skillet and set it aside.
Crisp the Potatoes: In the same skillet, add the cooked potatoes. Cook for about five or seven minutes until these get golden and crispy. Stir often for even cooking.
Add Garlic Butter: Change the heat to medium-low – add the butter and minced garlic in the skillet with the crisp potatoes. Stir it until the butter melts and the garlic gets fragrant.
Combine: Put the steak bites back in the skillet – toss to coat in the garlic butter. Cook for one or two more minutes for heating.
Serve: Garnish with chopped parsley. Serve it hot. Consider a side salad or steamed food.
