The Best Comfort Food
This French onion soup has sweet caramelized onions and beef broth, along with toasted bread with Gruyère cheese. It is warm and hearty, along with being good for any event.
The flavors join well – it creates a rich soup that warms you on cold days.

Ingredients
4 yellow onions, cut thin
4 tablespoons butter, unsalted
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon sugar
8 cups beef broth
1 cup white wine (optional)
1 tablespoon thyme or 1 teaspoon thyme, dried
1 bay leaf
1 baguette, cut
2 cups Gruyère cheese, shredded
Black pepper to taste
Instructions
To Caramelize Onions: In a large pot, melt the butter and olive oil over heat. Add onions and salt next to the sugar and cook for 30-40 minutes until the onions become caramelized and golden brown.
To Add Broth: Stir in the wine (if you use it) and scrape browned bits from the pot bottom. Then add the beef broth and thyme and bay leaf and let it simmer. Cook for 30 minutes to help the flavors join.
To Prepare Bread: While the soup simmers, heat the oven to 350°F (175°C). Arrange bread slices on a pan, add olive oil, and bake until golden brown.
To Serve: Take the bay leaf from the soup. Pour the soup into bowls for oven use – add toasted bread and sprinkle Gruyère cheese. Put the bowls near the broiler until the cheese melts and bubbles, about 2-3 minutes.
Enjoy: Serve it hot; besides, enjoy the warm flavor of this soup.
