Ingredients

4 yellow onions, cut thin

4 tablespoons butter, unsalted

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon sugar

8 cups beef broth

1 cup white wine (optional)

1 tablespoon thyme or 1 teaspoon thyme, dried

1 bay leaf

1 baguette, cut

2 cups Gruyère cheese, shredded

Black pepper to taste

Instructions

To Caramelize Onions: In a large pot, melt the butter and olive oil over heat. Add onions and salt next to the sugar and cook for 30-40 minutes until the onions become caramelized and golden brown.

To Add Broth: Stir in the wine (if you use it) and scrape browned bits from the pot bottom. Then add the beef broth and thyme and bay leaf and let it simmer. Cook for 30 minutes to help the flavors join.

To Prepare Bread: While the soup simmers, heat the oven to 350°F (175°C). Arrange bread slices on a pan, add olive oil, and bake until golden brown.
