Ingredients
2 large sweet potatoes, peeled and diced
1 pound of sausage (pork, chicken or turkey, your choice)
1 medium onion, chopped
1 red bell pepper, diced
1 green bell pepper, diced
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon smoked paprika (optional)
Fresh parsley or green onions for garnish (optional)
Instructions
Cook the Sausage: In a large skillet, put 1 tablespoon of olive oil. Set the heat to medium. Add the sausage. Brown it and cook it. Break it into small sections as it cooks. Then remove the sausage from the skillet and set it aside.
