Ingredients:

1 lb ground beef (80/20 or more fat offers better taste)

2 tablespoons beef tallow

Salt and pepper for taste

4 cheddar cheese slices

4 sourdough buns

Toppings: lettuce, tomato, onion, pickles (optional)

Instructions

Prepare the Grill: Heat the grill or skillet over medium-high heat.

Form the patties: Divide the ground beef into 4 equal parts and shape them into balls, being careful not to work the meat too much.

Cook the Patties: Add beef tallow to the skillet. Put each beef ball on the skillet and press it down with a spatula until it measures about 1/2 inch thick. Season with salt and pepper.

Flip and Add Cheese: Cook for about 2-3 minutes until a hard surface forms, then turn the patty and place a cheddar cheese slice on top right away. Cook an extra 1-2 minutes until the cheese softens.
