This spinach artichoke chicken skillet is a tasty dish with soft chicken breasts. They are cooked in a good sauce made from spinach, artichoke hearts, and melted cheese. It is a fast and filling meal for any day.

Ingredients

4 boneless, skinless chicken breasts
One tablespoon olive oil
Two cups fresh spinach, chopped
One cup canned artichoke hearts, drained and chopped
One cup cream cheese, softened
A half cup sour cream
A half cup grated Parmesan cheese
One teaspoon garlic powder
Salt and pepper to taste
For topping a half cup shredded mozzarella cheese

Instructions

Get the chicken ready. Add salt and pepper along with garlic powder to both sides of the chicken breasts.

In a big skillet, heat olive oil on medium. Add the chicken breasts and cook them for about 6-7 minutes per side until they look golden and are fully cooked. Take the chicken from the skillet and put it aside.

In that same skillet, put the chopped spinach plus artichoke hearts. Sauté them for 2-3 minutes until the spinach gets soft. Lower the heat and add cream cheese and sour cream next to the Parmesan cheese. Stir well until all melts and mixes.

Put the chicken back in the skillet. Spoon the creamy spinach-artichoke sauce over the chicken and sprinkle the shredded mozzarella cheese on top.

Cover the skillet – let it heat on low for five more minutes or until the cheese melts and bubbles.
